I have several fresh squash and I want to know if it is and how to can squash. I don’t have a lot of freezer space.
Cut them up and put them in ziplock bags (the freezer kind) I do this with zucchini so I can make zucchini bread in the winter.

Quarter or cube the squash and follow the basic instructions of canning. The only draw back from canning squash is that the vegetable will loose alot of the characteristics of texture/mouth feel that make it yummy in the first place. Have you thought about storing in a cool dry place? Squash can last a VERY long time before it ripens and spoils! Good luck.

To freeze blanch then drain well, and even set on clean dish towels or paper towels to remove more water.
Arrange in a single layer on a cookie sheet lined with parchemnt or wax paper. Freeze then slide into a ziplock baggie that is well labled and dated. Shake out a few at a time to saute or steam for dinner. YUM!!!

I do it many way depending on what I want to use them for later.
Slice in little pucks and shake them in a bag of flour if you want some for frying later. Keep them apart until they freeze then they won’t stick together.
Slice into pucks or long wide strips and bag for mashed or larger slices then freeze.
Julienne slice and freeze for grilling, smoking or pretty dishes. I like to mix zucchini and yellow squash with red and green peppers it looks pretty and tastes great!
Grate yellow or zucchini squash removing seed to save for breads later on and freeze.
Expel all the air you can from freezer bags or use a vacuum sealer to keep all winter long!
