i roast the squash and put garlic and mixed herbs on it, then place in a pan with a tin of chopped tomatoes and puree, makes a lovely thick soup.

Ginger and garlic go well,they also work well with sweet potatoes,oh if you only have dried herbs,try sage,I had butternut squash soup in a resturant and it had sage in it.

For soup, I’d add some sauted onion and a little ginger and nutmeg. The contrasts between the savory and sweet would be yummy!
